Chefs from Crossbasket Castle have paid a visit to the kitchen at Crossbasket House in Glasgow, bringing to life a dream dessert designed by the families receiving support from the charity.
The Crossbasket House Creation has now joined the dessert trolley at the hotel’s Trocadero’s restaurant, with all profits directly supporting the charity.
Crossbasket House provides vital support and accommodation for families travelling from across Scotland and beyond, while their children receive care at Glasgow Children’s Hospital.
To launch the initiative, the hotel invited families and staff to sketch their ideal sweet creation. Siblings and parents from Crossbasket House, along with staff providing support to the families, filled their drawn bowls with concepts ranging from candy floss to sprinkles, with adult additions such as spun sugar and caramelised pineapple.
Executive Chef Kevin Barron and his team took those imaginative ideas back to the castle’s kitchen. They went on to craft a delicate white chocolate sphere filled with strawberry compote, light gluten-free sponge, and banana custard, finished with whipped vanilla cream, shaved milk chocolate, sprinkles, and fresh raspberries.
The Crossbasket House Creation expands upon the estate’s ongoing partnership with the charity, which also includes an optional £2 donation added to dining bills across the castle.
Kevin Barron, Executive Chef at Crossbasket Castle, said: “Working from the drawings was the most rewarding assignment our team has undertaken.
“Everyone approached the design with complete freedom, which made the process extraordinary. Presenting the finished dish to them and watching them see their own ideas on the plate was an incredible experience for our entire team.”
Crossbasket House is an organisation held very close to the hearts of everyone at Crossbasket Castle. In November 2024, the facility became part of Glasgow Children’s Hospital Charity and was renamed to reflect the substantial donation from the owners of Crossbasket Castle.
The House is a ‘home from home’ for families of seriously ill children at Glasgow Children’s Hospital. Just a 5-minute walk from the hospital, it offers a warm, welcoming place to stay – completely free of charge – thanks to generous donors and fundraisers. The Crossbasket House Creation is now available to order at Trocadero’s, with guests able to try the special creation while raising money for a worthy cause.
